Valentines Day is coming up in a matter of weeks. If you want to whip up something romantic for your sweetheart, try baking cookies for two! Standard cookie recipes expect you to want at least a dozen. While that’s all well and good if you plan to share with a group, baking for only two people would make a romantic Valentines Day gift or dessert after a special meal.
I developed two different recipes that are sure to satisfy the sweet tooth in your life.

When you stack them together, they look like a bizarro cheeseburger. See?

Chocolate Chocolate Chip
1/4 cup unbleached all purpose flour
1/8 tsp. baking soda
1/8 tsp. salt
1 tsp. cocoa powder
1 tbsp. nondairy butter
1/4 cup sugar
1/8 tsp. vanilla extract
1 tbsp. nondairy milk
1/2 tbsp. vegetable oil
1 tbsp. semi-sweet chocolate chips
Preheat your oven to 350 degrees. Line a baking sheet with parchment paper or spray with cooking spray. In a small bowl, sift or whisk together flour, baking soda, salt and cocoa powder. In a separate bowl, cream together non-dairy butter and sugar. Drop in your vanilla and whisk. Add in your dry ingredients and mix well. Add in oil and milk substitute and mix well. Fold in chocolate chips. Separate into two equal sized balls and place on the baking sheet. Shape them into a heart if desired, or press flat slightly. Bake for 10 to 15 minutes. Allow them to cool on a wire rack.
Pink Sugar Cookies
1/4 cup + 2 tbsp. unbleached all purpose flour
1/8 tsp. baking soda
1/8 tsp. salt
1/4 cup sugar
1 tbsp. nondairy butter
1/8 tsp. vanilla extract
1/2 tbsp. vegetable oil
1/2 tbsp. nondairy milk
Few drops red food coloring
Sprinkles for topping
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper or spray with cooking spray. In a small bowl sift or whisk flour, baking soda and salt. In a separate medium bowl, cream together nondairy butter and sugar. Splash in vanilla and whisk. Sprinkle in a few drops of red food coloring until you reach your desired shade. Mix well with a spoon. Add in your dry ingredients. Whisk together, then add oil and milk substitute. Beat or whisk well to combine. Spoon two equal balls of dough onto your baking sheet and press slightly. Top with sprinkles and bake for 10 to 15 minutes. Transfer to a wire rack to cool.
